Cookie or Brownie?
They are called “congo bars”.
When I first read the recipe on Bakeralla, I was a bit bemused. A brownie that tasted like a chocolate chip cookie? How is that possible?
So I gathered the ingredients and got busy.
Ingredients
It was pretty easy – just mix the lot and put in a big tin to bake – kind of like making a giant cookie.
And you know what? I am going to make this again and again and again.
Call it what you want – brownie or cookie – it really doesn’t matter – it’s that GOOD.
Note: Next time, I am going to use chopped up chunks of chocolate instead of chocolate chips/drops. Then I can zap them in the microwave for 10 seconds so the brownie is warm and the chocolate is gooey!
Note 2: I omitted the pecans, used less chocolate and used self-raising flour.
Note 3: Oooh… come to think of it, some chocolate ganache to top it off would be lovely too.
